Chia Puddings are the ultimate healthy dessert, breakfast or healthy in-between meal snack. Chia seeds when added to liquid form a pudding-like gel, which when combined with creamy and naturally sweet ingredients, makes for a yummy, guilt-free indulgence.
In early 2016 we started making Chia Pudding Pre-Mixes for clients, formulated based on a serving size being 40gm which goes into a jar (something like a empty jam jar) filled with 200ml of coconut milk. You then put the lid on, shake and then place into the refrigerator for 4 hours to set.
Getting the right consistency. Not too firm or not too liquidy. We’ve found about 65% Chia Seed in 200ml of Coconut Milk to work best. From there, you can be as creative as you like, although we recommend that you includes a variety of texture and strong flavor to over-ride the blandness of chia seed.
Organic Black Chia Seeds (65%) – We’ve found this percentage (approximately 4 tablespoons in a 40gm serving) to be just the right amount of chia seeds to make the perfect consistency. Chia seeds are an outstanding source of healthy omega-3 fats, protein and fiber.
Organic Superfood Powder(s) (15%) – Raw Cacao Powder (raw chocolate), Maca Powder (energizer with butterscotch-like flavor).
Organic Goji Berries (5%) – Adding a touch of dried berries, including as Goji Berries, aside from adding additional superfood nutrition and sweetness, also adds a nice textural component. These dried berries once added to liquid, plump up into a jelly-like pieces.
Organic Crunchy Superfood(s) (5%) – Superfoods like Cacao Nibs and Pepitas, soften once placed into liquid, however then tend to retain some of their crunchiness, so add a pleasant textural component to a Chia Pudding Pre-Mix.
Coconut Sugar (10%) – If you don’t mind a little bit of sugar in your Chia Pudding, then coconut sugar is the best option as it’s arguably the healthiest sugar going around. Coconut sugar unlike refined sugar, contains high levels of micro-nutrients such as zinc, calcium, along with some short chain fatty acids, polyphenols and antioxidants that may also provide some health benefits.
Ground Vanilla Bean Powder or some other flavouring powder – to round out your Chia Pudding Pre-Mix, you might like to add ground vanilla bean powder.
